Cheesy Turkey Taco Butternut Quinoa Bake
prep time: 10 minscook time: 20 minstotal time: 30 mins
unreal flavor & fiber packed weeknight family meal!
ingredients:
- 2 lbs 93% lean ground turkey
- 1 tbsp olive oil
- 1 can black beans, rinsed
- 1 cup sweet corn, thawed
- 1 large red bell pepper, diced
- 1/4 cup fresh cilantro or parsley, chopped
- 3 tbsp chili powder
- 3 tsp cumin
- 2 tsp garlic powder
- 2 garlic cloves, minced
- 3/4 tsp sea salt
- 1/2 tsp black pepper
- 1 yellow onion, diced
- 2 cups cubed butternut squash, roasted*
- 1 can fire roasted diced tomatoes
- 2 cups cooked quinoa**
- 1 cup shredded cheese of choice (this is mine)
instructions:
- preheat oven to 350 degrees, and coat a 9 x 13 baking pan with no stick cooking spray.
- to a large pan or skillet, add 1 tbsp olive oil over medium-high heat.
- add diced onion, minced garlic, & diced bell pepper, and sauté for 4-5 minutes.
- add ground turkey to pan and break apart/crumble with your spoon as it cooks and browns, approx. 5-7 minutes.
- add seasonings, corn, beans, tomatoes, cilantro or parsley, quinoa, squash and mixed until just combined.
- pour mixture into prepared pan and spread it out evenly with your spoon.
- top with shredded cheese and bake for 10 minutes or just until cheese is melted.
- sprinkle with more fresh chopped cilantro and serve!
