Cheesy Turkey Taco Butternut Quinoa Bake

prep time: 10 minscook time: 20 minstotal time: 30 mins

unreal flavor & fiber packed weeknight family meal!

ingredients:

instructions:

  1. preheat oven to 350 degrees, and coat a 9 x 13 baking pan with no stick cooking spray.
  2. to a large pan or skillet, add 1 tbsp olive oil over medium-high heat.
  3. add diced onion, minced garlic, & diced bell pepper, and sauté for 4-5 minutes.
  4. add ground turkey to pan and break apart/crumble with your spoon as it cooks and browns, approx. 5-7 minutes.
  5. add seasonings, corn, beans, tomatoes, cilantro or parsley, quinoa, squash and mixed until just combined.
  6. pour mixture into prepared pan and spread it out evenly with your spoon.
  7. top with shredded cheese and bake for 10 minutes or just until cheese is melted. 
  8. sprinkle with more fresh chopped cilantro and serve!

**i use my rice cooker to cook my quinoa; i also use low-sodium chicken broth instead of water.
