Chocolate Coated Rice Cakes

whole grain rice cakes coated in dairy-free chocolate! fun, healthy snack kids love to create and enjoy!

ingredients:

instructions:

  1. in a small bowl, melt chocolate chips and coconut oil in 15 second increments 
  2. once heated, stir until completely smooth
  3. dip or drizzle cakes into melted chocolate and and place on a large baking pan 
  4. add any fun toppings you or your kids would love while the chocolate is wet
  5. place pan in the freezer for 20-30 minutes for the chocolate to set, then enjoy!

NOTES:

the thick rice cakes tend to become chewy after the chocolate sets in the fridge or freezer if you don't eat them immediately.   i suggest going with the thinnest cakes you can find.
