Cool Creamy Dill Dip

simply wonderful for dipping veggies in or drizzling over proteins (chicken, fish, beans, steak, etc.)!

ingredients:

  • 1 cup raw, soaked & drained cashews*
  • 1 large garlic clove
  • 2 tbsp yellow onion
  • 1/4 cup fresh chopped dill
  • 1/2 tsp salt (or more to taste)
  • cracked black pepper to taste
  • juice of 1 lemon
  • 1/2 cup unsweetened cashew milk
  • 1/4 cup filtered water

instructions:

  1. add all ingredients to your high powered blender and blend until super smooth and creamy.  
  2. taste! add more salt if needed; enjoy immediately or place in the fridge to chill.

NOTES:

soak raw cashews in very hot water for at least 2 hours minimum. overnight is best if you can do this ahead of time.
