Healthy Oatmeal Chocolate Chip Blender Muffins

instructions:

  1. preheat oven to 375 and coat your mini muffin pan with no-stick cooking spray or paper/silicone liners
  2. add all ingredients except for chocolate chips to your blender and blend until smooth (about 30 seconds)
  3. scrape down the side of the blender and blend once more
  4. dump batter into a large mixing bowl (or just remove your blender blade) and fold in chocolate chips (or any other fun add-ins you'd like pecans, walnuts, etc.)
  5. bake 17-18 minutes and let cool
