How to cook Pecan Pumpkin Banana Bread

  1. preheat your oven to 350 degrees and prepare a bread pan with wax paper lining the bottom and sides
  2. combine all ingredients EXCEPT pecans and chocolate chips into your food processor OR just mix well by hand (i did!) until smooth (or slightly chunky
  3. gently fold in pecans and chocolate chips into the batter and pour mixture into your prepared pan. use a spatula to scrape it all out!
  4. bake for 30 minutes and shut off your oven, but don't open the door. let pan sit for 10 more minutes before you remove it from the oven
  5. once cool, cut loaf into 8 - 10 slices 

NOTES:

you can make your own oat flour by simply grinding old fashioned oats into a flour-like consistency using your high powered blender or food processor.
