Savory Stuffed Roasted Squash

ingredients:

roast the squash
  • 2 acorn squash, halved
  • drizzle of olive oil
  • sea salt & cracked black pepper 
ground turkey

instructions:

  1. preheat oven to 450 degrees
  2. foil a large pan and place and drizzle acorn squash halves with olive oil and sprinkle with salt & pepper
  3. place them skin side down on your pan and bake for 30 minutes
  4. -----
  5. in a large skillet set to medium heat, add olive oil.  
  6. add onion and garlic to your pan and stir it around until fragrant, about 1-2 minutes.  
  7. add ground turkey and break it up/spread it out with your spoon as it browns and cooks.  
  8. add seasonings,  can of tomatoes, spinach, and mushrooms and combine well. 
  9. let this mixture simmer until it is cooked through, about 4- 5 minutes 
  10. -----
  11. once squash is roasted and ready, remove them from oven and scoop ground turkey mixture evenly into the center of each squash. 
  12. top them each with your cheese of choice, and put them back into the oven for another 20 minutes

  14. finally remove the squash from the oven and top with fresh green onion
