How to cook Shrimp Fried Rice

  1. to a large pan over high heat, add sesame oil, avocado oil, and 1 tbsp of light dairy-free butter
  2. add shrimp and cook for about 45 secs to 1 min on one side, flip, then cook for 1 min on the opposite side or until just cooked through. be careful not to overcook! remove shrimp from the pan and set them aside on a plate, covered
  3. reduce heat to medium
  4. in the same skillet, add remaining 1 tbsp of butter
  5. add garlic, peas, carrots, and corn, and let sauté for 2-3 minutes, ensuring the garlic does not burn.
  6. sprinkle 1/4 garlic salt onto the the veggies and mix well
  7. push all the veggies to one side of the pan and add your beaten egg to your skillet
  8. scramble with a fork until just cooked through
  9. now, everybody into the pool! add the cooked rice, shrimp, green onion, remaining tbsp of butter, and drizzle the coconut aminos over everything, especially the rice. combine and mix well (the white rice should be browned in color from the aminos)
  10. sprinkle with sea salt and cracked black pepper and taste!

NOTES:

*i recommend using white basmatti rice or white jasmine rice cooked in coconut water for best flavor results

*i use Coconut Aminos (see above link in the recipe ingredients!) instead of soy sauce. incredible swap, you'll see
