Super Nutty Granola

hearty, nutty, crunchy, and naturally sweetened. great for parfaits, an ice cream topping, or all by itself!

Ingredients:

  • 2 cups old fashioned oats
  • 2 heaping tbsp melted coconut oil
  • 1/3 cup agave nectar
  • 1 tsp cinnamon
  • 1/2 tsp sea salt
  • 1 tsp vanilla extract 
  • 1/4 cup pistachios
  • 1/4 cup walnuts
  • 1/4 cup goji berries
  • 1/4 cup unsalted pepitas (pumpkin seeds)

Instructions:

  1. preheat oven to 350 degrees
  2. coat a large baking pan with no stick cooking spray or parchment paper
  3. combine all ingredients into a large mixing bowl well
  4. spread unbaked granola all across your pan evenly
  5. bake for 10 min and stir around with a spoon
  6. bake for 10 more min and stir around with a spoon again
  7. bake for 5 more minutes and remove pan from the oven.
  8. it will crisp up nicely as it cools!

Notes:

add any type of nuts or dried fruit that you like; I would add the dried fruit at the halfway mark as it tends to get super chewy when heated for too long.
