After School with ALDI: New Year, New Snacks

Hey y’all! the holiday season has come and gone (can you believe it!?) and I’m grateful to be here to serve YOU and rock 2022!
Not only did I make a few goals for myself as usual, but the Egwuatu family sat down and made some together for the first time.
If you google Top 5 New Year Resolutions you’ll typically find, “eat healthier”, “exercise more”, or, “get healthier” at the very top of each list. Can you relate?! Family health is a priority for Sonny and I, and we do our best to consistently live healthy lives in front of our children. We hope and pray our example sticks!
Here are a few of our family goals for the new year:
➡️Limit fast food to 3-4 times per month (like once a week which is totes doable)
➡️Make your very best effort to say I love you, please, & thank you
➡️No texting and driving
➡️No tv or phones during dinner
➡️Eat (try!) 1 healthier-for-you snack per week

I enjoyed making after school snack boards all last Fall but this one is different in the best way❤️. The kids took the lead and made it themselves using high-quality, affordable ingredients from ALDI!
ALDI helps us easily embrace healthy living by providing such a wide variety of organic (yes, organic!) and better-for-you options. They also helped me whip up two new dairy-free snacks for their board.
Every snack board needs a yummy dip. They all like guacamole, so I added some fiber (spinach) and protein (yogurt) to this savory Spinach & Avocado dip.

Avocado Spinach Dip
Ingredients
- 2 ripe avocados
- 2 cups Simply Nature Baby Spinach
- 1/2 cup lactose-free Greek Yogurt
- 2 tbsp vegan parmesan cheese
- 2 tbsp lemon juice
- 1/4 cup red onion, minced
- 1 garlic clove, minced
- 1 tsp garlic salt
- 1 tbsp Extra Virgin Olive Oil
Instructions
- Combine all ingredients together in your high powered blender or food processor and blend until smooth!
- scrape into a serving bowl, cover, and chill in frige for at least 1 hour.
- grab your veggie sticks or chips!

2 gI grabbed some Specially Selected Sea Salt Pita Chips and Simply Nature Blue Corn Tortilla Chips to dip into the guacamole with. I am always so impressed with the quality to price ratio at ALDI! I check out satisfied, content, and proud that I am easily able to stay below my grocery budget time and time again.

Next, a sweet, gluten-free treat full of whole grain oats! PB & J sammiches are also favorites around here, so these bars really hit home. Kosi is allergic to peanuts, so I used sunflower seed butter; peanut butter works just fine.

Strawberry Sun Butter Bars
Ingredients
- 1 1/2 cup Old Fashioned Oats
- 1 cup fine Almond Flour
- 1 tbsp 100% Pure Maple Syrup
- 1 cup Strawberry Preserves
- 1/4 cup Sun Butter
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla
- 4 tbsp cold plant butter
Instructions
- Combine oats, baking soda, salt, sugar, vanilla, almond flour, maple syrup, and sun butter well.
- Cut butter into cubes (make sure it is cold) and press into the dry mixture with your fingers until clumps form.
- Press 3/4 of the mixture into the bottom of a 9 x 9 pan.
- Add preserves to the top of the bottom later in dollops, then spread the preserves evenly.
- Sprinkle the remaining crumb mixture on top of the preserves.
- Bake for 30 minutes at 400 degrees.
- Once out of the over, let pan cool completely before cutting to ensure they hold their shape.

I said, “GO!” and they dove in immediately…at the same time, lol.
I shop ALDI all year round; it’s my destination for healthy, budget-friendly items for our growing family of six. That Dego has a big appetite and keeps me in the kitchen all by himself most days though!!
