it's happening again!  i have worn a size 10 shoe since i stopped growing.  for some strange reason my feet shrink when i get preggo.  seriously!  you would expect the opposite, right!?  i walked away from a successful shoe shopping trip with these adorable, peep-toe nine's and another 9.5 pair (both reduced waaaay low, woo hoo!), which worked in my favor because 10 wasn't available in either.  luckily these skinny jeans are super stretchy and can support my expanding bump a lil' while longer.  i am loving flounce tops like this one and the off-the-shoulder look is needed for this unforgiving Texas summer heat. whew.

calling all Greek freaks and Niko Niko lovers!!! Niko Niko's new I-10 & Beltway 8 location is now open!  did you ever catch Niko Niko's on Diners, Drive-Ins, and Dives with Guy Fieri on Food Network? well deserved appearance, no doubt. they were already on Houston's map though!Hubs and i didn't mind taking the drive into the city to the original Montrose location, but we're cool with them meeting us halfway :) . ironically, it's 30 seconds away from my gym. #uhohthey knew the crowd was on its way so they were well equipped with this huge, accommodating, dining room. nice. i wasn't too hungry but still wanted to enjoy an outing with my bears.  i stuck with their seafood soup + greek salad combo.  their greek salad has always been and will always be THE bomb!  also chose to go light because eating late always ends up being a terrible idea.  i wake up burping up the food i ate the night before because it hasn't finished digesting yet. ugh! all apart of the preggo process though. (remember, this helps with that!)

everything on this plate is a fan favorite.  the seasoned, tender lamb, the soft, chewy pita bread, the crispy, non-oily fries, the buttery rice, and that one-of-a-kind tzatziki sauce. #herculesplate

pita pizza (which i don't even think is on the menu but was customized for us)and pita chicken quesadillas for the boys.talents:  picking dessert.as i stood there dumbfounded, several people had the same idea and came up to snap pics of this massive, goodie filled dessert case. you can't help it!portion control on deck! 3 for 5 bucks. tiramisu, almond something, and chocolate something. lol. my sweet cravings are coming back unfortunately and fruit just ain't cuttin' it these days.  doing my best to lean on the 80/20 nutrition rule, move 5-6 times a week, and drink plenty of water. ya know, the usual!

easy, fresh, healthy, steamed fish foil packets

Steamed Fish Foil Packets

the stuff:

  • 2 lb fillet of trout (of fish of choice: salmon, halibut, etc,)
  • 2 stalks green onion, chopped
  • 1 large red (or any color) bell pepper, thinly sliced
  • 1 large zucchini, sliced thinly into rounds
  • 1/2 cup fresh cilantro, roughly chopped/minced (or any fresh herb: dill, basil, thyme, etc.)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • cracked black pepper & sea salt to taste
  • 1 heaping tbsp of any seasoning blend of your choice
  • 1 lemon, sliced

do this:

  1. preheat oven to 425 degrees
  2. in a small bowl, mix all dry seasonings together
  3. section fillet into desired portions using a sharp knife or kitchen shears
  4. tear off sheets of foil (15'' x 15'') and lay them out across a large workspace
  5. coat one half of the sheet with no-stick cooking spray, and place each fillet portion on that same end, leaving space between the fillet and the edge
  6. place veggies & herbs around your fillet (lemon slice on top); sprinkle veggies and fillet generously with seasoning
  7. fold over the uncoated side of foil covering the fillet and veggies. crimp the edges to form a packet
  8. i placed the packets directly on my oven grate, but you can also place them flat on a very large baking pan.
  9. bake 8-10 minutes (depending on the thickness of your fillet portions).  a general rule is 10 min per inch of thickness
  10. take out, let cool, unseal pouch, open. *cue ooohs and aaaaahs*

i hope you guys enjoyed your Mother's Day, however you spent it! remembering past, present, and future moms. this job ain't easy, but what an honor it is to be a mommy.

my fam treated my grandmother to a birthday/mother's day lunch the saturday before Mother's Day at Mia's Table.  it was my first time there and i loved the homeyness of the place!  do you even have to ask what i ordered....

so sunday i didn't get to sleep in LOL, but what better way to wake up, right!? this is all i wanted. EVERYTHING else was just an added bonus. this is why we can't co-sleep anymore right here though. we'd all wake up bruised and battered, my goodness. and YES, that hurt!

Sonny picked another great restaurant for us to dine at after church, Latin Bites!  we pretty much shared everything you see up there. fresh & tasty.  we then went to hang out with our moms for the remainder of the day.

oh yeah, THAT'S why i turned to group fitness in the first place!  sometimes i wander the weightroom aimlessly looking for the correct machine and can't find it without asking a trainer half the time.  plus, i am often unmotivated when working out solo.  i'd go from machine to machine...do a few half-hearted reps of whatever and barely get through my 'routine'.  this time, my motivation is completely different.  this time, i ask with pride :D. seriously though, this upcoming show is my constant reminder to just go hard,  suck it up and get it done.

i work out with my trainer a few times a week and he gives me things to do on my own as well.  i did lower body today and a lot of girls tell me that legs is their fav thing to work.  well i hate it all!!!  if only we could all #fastforward to the end result.

some of you have asked just what the heck have i been eating to see all these changes, and the answer is real food, lol!  no supplements or crazy detox drinks.  remember, i'm still breastfeeding for now and i will not compromise nor put myself or Chiso in any danger whatsoever.

meal plan is now going great- eating the same meal ALL day long was the worst.  my trainer has given me several exchanges for my veggies so i don't get bored and i SO appreciate it.   i usually have chicken or fish with veggies, a starch, and a good fat.  balance and portion control.  i throw it all in one bowl and mix everything together.  this dinner in particular is mustard greens, tilapia, potatoes, and avocado.  not pretty, but edible!

grocery shopping has become boring and downright depressing for me.  i go in, ignore the sample stations, get exactly what i need on my meal plan and get out. :roll: on top of that, **breaking news** Trader Joes FINALLY made its way to Houston!!!  well, close enough for now.  it's actually in the  Woodlands which is about 45 min north of us.  i'm honestly glad it's not right around the corner cause i don't want to be so close to their AWESOME, indulgent, one-of-a-kind snacks.  they dip some of the craziest things in chocolate and it usually tastes crazy good!!! the last time we had the pleasure of visiting TJ's was for our 4th anniversary in LA last year:

 i stuffed as much crap as i could into my suitcase before we left.  unfortunately,  i will have to stay my behind outta there until September.  but watch this- the Houston Trader Joe's location is scheduled to open in Sept. :P. i will definitely be celebrating and breaking my sweets fast up in there.  already got a mental list going in my head.

my trainer will check to see how much body fat i have lost in two weeks this saturday.  just a quick update! holla!
