v day fell on a sunday this year so our day started with heart pancakes cause clichés are SO fun, right! and don't you just love the mesmerizing sounds of the dish washer? as i made those cakes i thought to myself "i live in a house full of boys.... nobody cares about this stuff but me!"

a special guy deserves a special plate. tried to get fancy with my 25 cent squeeze bottle.

sooooo Sonny's plans included church, gym, sending me off to get a much needed pedi, and then dinner, but we didn't do ANY of that.  after breakfast we all (us and both boys) somehow ended up back in bed.

on holidays and special occasions, we definitely relax, enjoy ourselves, and ease up on our maintenance meal plans.  appetizers!  lobster bisque, jumbo lump crab tower, and a house salad with mixed greens, fresh vinaigrette, roasted goat cheese & sliced tomatoes.

20160214_191140-01and i went waaaaay outta my comfort zone and skipped over salmon this time. #WUT!  i went with their homemade linguine and lobster dish.  i have not ordered pasta while dining out in years.  the portion sizes are almost always crazy big and usually covered in a fatty, buttery, creamy or heavy sauce.  truth be told, i ate the lobster off the top, the asparagus of course, and maybe 2 forkfuls of pasta. bravo, hubs. 

we had our final course at The Chocolate Bar about a mile away.

so, i'll post an Instagram pic of something utterly & sinfully indulgent on my IG eeeeevery blue moon... but even then it still comes with a price.  a price in the form of one of our 6 Pack USA clients asking/requesting for that particular food item to be added to their meal plan. lol.  anyway, there are SO many delicious, lighter, dairy-free ice cream options these days that it will blow your mind!!! this lactose intolerant girl is unbelievably grateful for them.  however, we lived life on the edge that night and i ordered 3 scoops of dairy & full fat (rocky road, toffee chip, tiramisu ) ice cream. yes, it's my time of the month. LOL.  PMS hormones make me do some cray-cray stuff.  long story short, i only got through half of it and left looking 8 months preggo. worst tummy ache and bloating on the ride home, ever. you win again, dairy. *raises white flag* 

we enjoyed some kid-free time together above all else!

we haven't exchanged actual gifts on V day in a couple of years, but we did flip through this book i picked up at Urban Outfitters a while back by Lisa Currie.

food, yes, flowers, no! i've never been a girly girl but i do love fun couples stuff like this!  15 years and i'm still learning new stuff about Sonny along this marriage journey of ours.  no matter how busy life gets, don't let your connection with your spouse slip away.  plan & prioritize some distraction-free (NO PHONES ALLOWED) time and no matter what, don't flake.  how much time you have, whether you can get the kids watched, etc., etc., depends on your specific situation, but make it happen.

this was our v-day weekend '15!  my parents gifted me with a Sur La Table gift card for Christmas and i finally put it to use by signing Sonny and i up for a couples cooking class. a tasty, fun, night. seriously!  if you've never done one, do one then! we were on the wait list and got in because another couple canceled.  so V-Day eve we made and devoured:

Sonny doesn't really do creamy type desserts so i smashed his too. omg, it was SO GOOD. i can't even remember the last time i had full-fat cream so i savored EVERY single bite of yumminess in that ramakin! the creaminess was out of this world. i'm about to sound like a Food Network Star real quick: 'the creaminess and sweetness of the custard combined with the cold, fluffy, whipped cream and crunch of the cocoa nib cookie... dessert trifection.' #AndCut
we were paired up with such a down to earth, funny couple. an #usie was a must, lol.

we all came together to make a 'mock' dessert.  they just wanted us to go through the actual steps should we make it at home.  they had plenty of pre-made pots de creme ready for us in the fridge since it has to chill in there for while ahead of time.

we used a 25 cent squeeze bottle for the melted chocolate and plenty of sprinkles!  it's the same bottle i use to freestyle his pancake shapes on the griddle.  more inexpensive toddler entertainment!

V-Day was on saturday so most restaurants were crazy full!  we tried to go to Benihana's with no reservation... HA!  that bombed so we ended up at Whole Foods Market which had something for all of us. Chiso suggested we have a picnic, so we went home and had one while watching the All Star Festivities.

clearly i'm going to start using the Sony cam Sonny bought me on my birthday last year- those black bars are not hot and i recently found out i can't do a thing about them since i recorded the vid vertically with my cell. oh wells. we used my Sony cam last night to film us making banana ice cream so i'll be uploading that vlog soon, bar-free. OK, on to this BANGIN' Cajun Lobster Pasta recipe i posted to IG recently! if you're staying indoors on V-Day next saturday, WOW your significant other with this incredibly tasty, healthy, savory dish.

so this was my first time EVER cooking lobster at home. using some kitchen shears, i 'parted the red sea' by cutting a center line straight down through the top of the shell, exposing the meat. then i just pried it on outta there without cutting myself. yay.

Cajun Lobster 'Pasta'

the stuff: (source)

  • 1 lb lobster (you can use claw meat too), roughly chopped into bite size pieces
  • 3 strips Applegate turkey bacon, chopped
  • 1 red, golden, or orange bell pepper, chopped ( or a combo of all three)
  • 1 cup portabella mushrooms, chopped
  • 4 stalks green onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup low sodium chicken, or seafood broth
  • 3/4 cup coconut cream (canned from Sprouts Farmers Market)
  • 2 tbsp Smart Balance Light Buttery Spread
  • 1 tsp Old Bay Seasoning
  • 1 tsp Cajun Spice Mix
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp lemon pepper
  • 1/2 tsp oregano
  • pinch of cayenne pepper
  • sea salt & cracked black pepper to taste
  • fresh parsley, for garnish
  • 3 large, raw, zucchini, spiralized

do this:

1. spiralize those zucchini's! i have a Spirooli (pictured below)

2. cook up bacon in skillet over medium heat until done; remove from pan

3. add butter, garlic, bell peppers, mushrooms to pan; saute for 2-3 min

4. add half your green onion mixture and cook 1 more minute

5. chop bacon and throw it into your pan along with your broth

6. add all your spices now: cajun, old bay, garlic powder, onion powder, lemon pepper, oregano, and S & P

7. turn up the heat; once almost simmering, reduce heat and add lobster meat. cook 3-5 more minutes

8. finally, add the coconut cream and fresh zoodles, and remaining green onion

9. toss, turn, and coat the entire pot of goodies until the zoodles cook down a bit to your desired texture (maybe 2-3 minutes). sprinkle with fresh parsley.

*tip* you might need to run a knife through the zoodles once or twice to shorten them because they can get so long, you know? this will make it easier to plate the dish.

i started saturday morning with a RUN!  yep, i stepped it on up and turned my power walk into a run. after a restful night i felt the urge and had the energy to do more for my workout.  and uhhh, my legs said GO but my boobs said NO.  ouch. so it definitely became more of a jog/walk kinda thing for about an hour or so. nice, early, humid workout nonetheless.

 great support from both sports bras and regular bras is EVERYTHING when it comes to postpartum boobs.  all boobies are different but i am now back up to a D cup (k, double) after getting quite comfy and confident with my B's post bikini comp last year.  my strongest, most supportive, 'old faithful' sports bra is so old actually that i can only find it used on eBay lol. it's the Asics Athletic Seamless Racerback bra and has served me well, so i'm sticking with the Asics brand from here on out. it's like a brand new bra after every wash- it tightens back up and provides maximum support.

mama and papa stepped out for a hot date saturday night!  dates are good. dates are refreshing.  dates keep things going, exciting, and refreshing. dates give you something to look forward to.  we are going on 7 years of marriage this year!  i actually had something really cool planned that fell through....but i didn't reveal it to Sonny yet cause i'm totally gonna try again.  so, we went to dinner anyway to just enjoy some kiddo-free time. and burgers.

repeat offender.  just one of those things Sonny has grown to 'love' about me.  even if we're at a new spot- i always play it safe and order salmon, and then we argue on how to even say salmon correctly.

this was a spring mix salad with radish and tomatoes.  now that i think about it, our waiter didn't ask me when kind of dressing i even wanted, so no idea there.  i was living life on the edge and didn't get my dressing on the side this time.

i had a hot date with Sonny last night.  *whistles* Chiso came too though.  and it was only hot cause we were sweating at the gym.

i have a few of my leg workouts already posted, but it's high time for some upper body.  symmetry is a great thing!

what happens when we gym together? instant camera man, whoop, whoop.

so because i work at different gyms, i come across all sorts of different equipment, which is a great perk.  this particular gym uses Hoist machines- have you used them?? i LOOOOOVE them! especially this bicep machine.  i really feel the burn where i'm supposed to because the rocking motion mimics the natural movement of a standing bicep curl without involving my lower back. sweet.

that 'dynamically rocking technology' (the rocking motion that occurs during use):

  • aligns and maintains joint position throughout the motion
  • reduces shear-stress forces within joints by creating multiple segment movement
  • provides small, yet appropriate proprioceptive challenges to the lumbopelvic hip complex (in layman's terms, that big hip joint)
  • improves stability and provides greater muscle pre-stretch or loading to overload muscles

we tried out the Sara Lee 45 calories & delightful whole wheat w/ honey bread last night for our post workout snacks.  that's egg whites, red bell pepper, and honey mustard up in my sammie. great stats, and great bread.

45 cals, 0.5g fat, 9 carbs, and 3g protein per slice. nice.

before i hit legs this morning, i made some dark chocolate chip banana pancakes to go with our eggs.  i used the base of my banana recipe but added a tablespoon of unsweetened cocoa powder, 1 packet of stevia granules, and even a few drops of chocolate stevia.  all drowned in WF pancake syrup....the only way to eat these babies.
