baby Dego wakes up so happy!  his mood is crazy contagious and always reminds me of this quote:

decisions, decisions! i start craving those weekend foods... pizza, french fries, subway cookies, etc.  i guess that's where my passion for making healthier versions of classic comfort foods came from though.  i want to satisfy that craving (more often) without sacrificing my health or gym progress.  fair enough!?  i'm so glad we have tons of healthier alternatives to work with and swap out these days! anyway,  i have been having some stiffness in my neck, so i hit the gym for cardio only and stretching for my saturday workout.  will be taking it easy so i can hit it hard again on tuesday for my HIIT class.

i stopped by Sprouts after the gym and picked up some protein: 99% lean ground chicken breast and Applegate organic chicken and apple sausage for breakfast next week.  i cracked open the sausage as soon as i got home though and had a filling post-workout meal of whole wheat toast, egg white/veggie/sausage scramble,  and kiwi (low sugar ketchup & cheddar almond cheese on the side). delish!!!!

oh, i got some pears too!  they were next in line to try for Dego's homemade baby food.  i just diced up 1 anjou pear, threw it in a small sauce pan with 2 tbsp water and 1/2 tsp cinnamon, covered it, and cooked it on med-low until tender.  after less than 10 min, i poured it all into my Ninja and pureed the mixture until it was super smooth.  pears = thumbs up!

then, we turned UP!!!!

Food Network mag, and i killed the last of that coconut Arctic Zero pint with some fat-free cool whip and sprinkles on top. party, party! hope you had a relaxing saturday yourself!! after your workout of course ;)

banana berry whole wheat french toast

my Chiso is a snotty mc nasty mess this week.  after taking him to the child center in a new gym, well, the inevitable happened. new gym, new germs.  it's been a looooong week of coughing, whining, and TLC over here, but we made it to FRIDAAAAAY!

this morning i made another batch of banana berry whole wheat french toast...oh yeah.

banana berry whole wheat french toast

the stuff:

  • 2 slices Natures Own double fiber wheat bread
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp raw, unsweetened organic coconut flakes
  • 1 egg white
  • 1/4 cup blackberries
  • 1/2 a banana

do this:

 combine the egg white, almond milk, cinnamon, and vanilla in a shallow bowl big enough to lay your bread flat in and mix it well. dip both slices of bread (front/back) until it is soaked through.  in a medium heated no-stick pan, lay both pieces of bread flat and cook until browned and crispy, about 3-4 minutes.  flip! cook that side until crisp for about 3-4 minutes as well.  plate it up, then top them with the bananas, blackberries, and a drizzle of Walden Farms pancake syrup.  last thing, sprinkle with more cinnamon and coconut flakes!

so....i FINALLY got a Facebook fan page for Fit Foodie Le.  i mean, it's only 2013.  i guess i battled with it for so long cause it's hard as CRAP for me to keep up with social media as it is!!

'nobody ever said it would be easy...but it WILL be worth it.'

that being said, sometimes i can't sit down and really write a post like i'd like YET, so i will use the fan page to post quick tid bits of info, recipes, motivation, inspiration and all that good stuff.  add me! or 'Like' my page rather ;)

alright, last thing- a few people tell me how much they absolutely HATE oatmeal (what is WRONG with them!? j/k) and asked me for some alternative breakfast ideas.  when i tell you i was seconds away from posting  a pic of some of the Kashi Go Lean Cereal i bought at the store a few days ago my finger came to a screeeeching halt after googling this:

can i just say i was almost commenter 411 cause this very thing happened to me too!!!!! i was like, wait a minute...i adjusted my macros JUST right to have these 2, ok 4, bowls of cereal for my late night snack and the next morning my tummy was straight MUSH.  bloating and uncomfy gas is not cool. now does Kashi have this effect on everybody?  maybe, maybe not.  however, i will have to add it my bloat list along with broccoli.  it can take time to figure out which foods YOUR body doesn't agree with!  adjust, bounce back, and keep on truckin'. and Googling :lol:

i'll dedicate a separate post to those breakfast alternatives!

before i go to bed

clearly i have a 10k to run in 11 hours!!! i met up with a friend of mine at Cafe Adobe for an early dinner after work tonight.  mexican food is one of my weaknesses, but i did a pretty darn good job of keeping my cool. i don't want no tummy trouble (nor do the runners behind me) tomorrow.   the chip basket did NOT phase me tonight like it usually does! i'm so proud.  didn't eat any.  not a one.  normally i'd order a quesadilla or something cheesy, but i kept it light and went with a cup of tortilla soup and a dinner salad.

pretty good.  nice sized chicken chunks, fresh avocado, tomato, and tortilla strips made the soup hearty and filling. the salad was fresh and crisp.  i also had some tangy avocado ranch dressing on the side.   my friend's plate looked and smelled scrumptious.

it was sizzling beef something..i can't remember. looks like fajitas with peppers and onions and a side of cilantro rice. the portion sizes were just right and  that creamy green stuff was delicious! tasted like avocado mousse.

 i'm up reading my newest mag and snacking on sweet & salty check mix....

i'm gonna pick out a celebratory dessert to make for after tomorrow's run, ha.  ipod is charging and i'm hitting the sack, NOW. g'nite!
