the first time i saw that meme on IG... instant tears. ooooh, spinning. the class i hate to love and love to hate.  i still remember taking my very first cycle class at 24HF years ago. i was drenched in sweat from head to toe like WHAT. JUST. HAPPENED.... *blank stare*.  i looked like i had just taken a dip in the pool, fully clothed.

Miko and i made it through again though!  i do believe the seat is more uncomfy the next few times after the initial time.  the 'it gets worse before it gets better.' phrase applies here.  wheeeeew, God bless spin instructors everywhere. i know you get used to it after a while but because i'm in the adjusting phase again it's definitely the discomfort talking. #seasonalcycler

colorful plates make my face and tummy HAPPY. i planned on baking meatballs this week but got lazy (hungry) and whipped up my lean apple-chicken  on Nature's Own Whole Wheat bread  with cheddar almond cheese instead. i still have Honey Crisp apples around from making homemade apple sauce, so i subbed one of those for the Red DelicicvVous apple my recipe calls for. i threw some steamed green beans, raw golden bell peppers w/ roasted red pepper hummus, and blackberries on the side.

CYMERA_20150115_115335 after making those chocolate coconut pb cups the other day, i got to thinking about other layered desserts and those classic banana fudge bomb pops came to mind. i used to LOVE getting them from the ice cream truck when i was a kid.  so i went for a healthier, dairy-free version!  Chiso gobbled his up, so i count it as a success!  I'd love them to be a little creamier, so i'm going to add some Skinny Tru Whip to the batters before freezing next time. make and try them with your kiddos!

Dairy-free Banana Fudge Bomb Pops

the stuff:

banana layer

  • 2 ripe bananas
  • 1/4 cup unsweetened cashew milk

fudge layer

do this:

  1. blend bananas and milk in blender until smooth
  2. add chocolate chips and milk to a microwave safe bowl and nuke it for 15 seconds at a time until chunks are completely melted. incorporate this together until smooth.
  3. add banana layer 1 to your popsicle trays filling them only 1/3 of the way full
  4. freeze for 15 minutes
  5. take out of freezer and add the chocolate layer, leaving room for banana layer 2 near the top
  6. freeze for 15 minutes
  7. take out of freezer and fill trays to the brim with banana layer 2. insert popsicle tops/sticks and put back into freezer for at least 1 hr or more.

* running hot water over the popsicle trays first helps them to pop out easier when you're ready to eat them by the way*

IMG_35531the boys and i finally got to hang out with and take an #usie with this amazingly sweet woman this week!  Adaeze is a long-time blog follower of mine (like she has been there from THE jump), a former 6 Pack USA client, and a newlywed (woo hoo!). it was a true pleasure chatting with her!!! she has such a genuine, gentle spirit a big beautiful smile to go with it.  i'm grateful for all her support over the years <3

had a bowl of organic rolled oats cooked in unsweetened vanilla almond milk, water, cinnamon, and vanilla before heading to my (now weekly) OB appointment this morning.   fresh blueberries, more cinnamon, more almond milk, and pure maple syrup went right on top.  i had egg whites w/ salsa on the side too. fueling up for some kickboxing a little later today.

was running late and threw on whatever (but i was comfy though!)  and we made it just in time for my group b strep test and routine check up.  if only pap smears were that quick & easy-peasy!  all is well @ 35 weeks and i thank Him for another great progress report. and yes, i smacked Chiso right after he smacked me.

so the hospital where Chiso was born doesn't do L&D anymore. i enjoyed the experience there and was saddened after hearing that!  however, the new hospital is literally 3 minutes away, so no biggie.  AND my favorite OB in the entire universe will be there to deliver Odego this time, Lord willing.  (she was out having her twins at the time Chiso was born :'(  ) .  i went ahead and registered juuuuust in case we have to pop up there sooner than expected, but i am coming back with Sonny to take a tour so we can be cheesy and take pics and stuff.  a date i am so looking forward too, again.  i hardly EVER buy overpriced convenience store food/snacks, but i was unprepared and Chiso got restless while i filled out paper work.  so i got him this Sabra pretzel and hummus dip along with a banana.

*updated* Zucchini Pizza Cruise Ships

the stuff:

  • 4 large, raw zucchini, halved & seeded
  • 2 cups cooked and seasoned extra lean ground turkey
  •  1 cup homemade marinara (add more if you'd like and the recipe is below)
  • 8 turkey pepperoni, cut into thin strips
  • 1 cup shredded almond or rice cheese
  • 6 cherry tomatoes, sliced into coins
  • 2 tsp dried italian seasoning or parsley or fresh basil
  • sea salt & cracked black pepper to taste

do this:

  1. set your oven to 350 degrees and coat a large baking pan with foil and no-stick cooking spray.
  2. after halving the zucchini, scoop some of the insides out using a small spoon.  they should look like empty canoes cruise ships once you're done; arrange them flat and seed-side up on your baking sheet.
  3. mix the cooked ground turkey and the marinara sauce together, then spoon the mixture evenly into/onto the zucchini.
  4. sprinkle the turkey pepperoni, tomato, and italian seasoning on top of the cruise ships, and bake them for about 20 minutes.
  5. remove them from the oven and sprinkle shredded cheese on top. ( i used 2% colby jack cause that's all i had. to keep this recipe dairy free, use almond or rice cheese.)
  6. let them bake once more for 7-10 minutes or just until the cheese melts to your liking.
  7. top with fresh basil or parsley!

i thought i posted my marinara recipe in the Fit N' Crispy Chicken Parm post but maybe it didn't save like i thought?? can't explain that one.  but here it is:

homemade marinara:

the stuff:

  • 1 6oz can tomato paste
  • 6 roma tomatoes, chopped
  • 1 large yellow onion, chopped
  • 2-3 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves, chopped
  • 2 tsp Italian seasoning blend (optional)
  • sea salt & cracked black pepper to taste

do this:

  1. heat a large sauce pan to medium-low heat; once hot, pour in your olive oil.
  2. add onions & garlic and sauté until translucent...about 2-3 minutes.
  3. add in the rest of the ingredients except sea salt and cracked black pepper, stir, cover, and let simmer for 12-15 minutes.
  4. shut off heat; add mixture to your blender or food processor and blend on high until super smooth.

you can make this ahead of time and store in the fridge to be used for pizza sauce, wing dip, breadstick dip, whatever!

my close friends are like 'girl SHUT UP about this forehead acne already. please.' and i will. when it goes away :shock: .   forreal though, it's the only symptom that is different from my 1st pregnancy. so 2% of me believed a mini fit foodie le was on the way.

 welp, yesterday was the day we got to confirm those (un)educated guesses.  i have been saying i don't care about the sex... i meant that.  i still don't care. i just can't believe i said i would wait until i was in the delivery room to find out....HA. yeah, not doing that. this round anyway!  i commend women/couples who actually go through with it though, seriously.

i was so excited i threw on some heels and we hit the road to meet Sonny.  i asked Chi for the last time that morning,' so, sister or a brother? '  he responded with 'no thank you mama.  i don't want a sister.' aaaaallrightythen.

 i couldn't help but think, 'i was just here with Chiso.' 3 years really did pass by that fast. funny how my entire visit happened just like last time too.  Sonny came to meet me (well us, this time) from work, and i even used the same changing room. on purpose.   i remember having to chug 20 oz or more of water just before the procedure. and i barely made it to the bathroom afterwards. like last time.

it was even the same nurse - i recognized her right away and the way she began: 'ok please let me find what i need to find first and then we'll eventually get to the gender, your questions, and then i'll show you your baby in detail.' aaaaallrightlythen. #doyourthing.  she reminded me that the procedure usually lasts an hour, but that's cause sometimes the babies don't cooperate or face in the best direction.  luckily our little one gave us a clear shot of the goods ;)  . i think it's hilarious to watch the baby's mouth opening and closing on the screen- i'm like what the heck are you even saying :lol: !?  it's also cool to see all the punching and kicking and feel it happening in your belly simultaneously.   just in complete awe of God, again.
