breakfast in 3! w/ Modern Oats

20150904_101539-01-1-1.jpg

fall is basically here and it's back to school time, parents!  we are all busy. we are all often scrambling to get ourselves and our kids together and out the door in the mornings. been there!  actually i'm there every day.  now that Chiso has started preschool (no tears from either of us, yay), i make sure he is focused and ready to learn before he leaves the house. how? some brefus! yes, breakfast.  it's incredibly important for everybody, so don't downplay it or sweep it under the rug.  statistics don't lie, peeps.  easy, to-go options in the form of healthy carbs are the way to go, not unhealthy, sugary, prepackaged, instant, frozen junk.  they need good, wholesome, nutrient dense foods that their bodies recognize so they can perform at their very best.  start this with your kiddos NOW!  they will only get busier and busier as each year passes; by the time they are teens and beyond breakfast will be second nature (and hopefully non-negotiable).  parents, we must send our babies off right and set them up for success.

if ya follow my blog or my Insta account then you'd already know how much Chiso (4 yrs) despises all vegetables.  however, he still loves oatmeal something serious!  so when this very special delivery hit our doorstep,  Chiso went BANANAS and could not wait to crack it open.

'yummy oatmeal, mommy!!!' yep, Modern Oats was officially in the building. look at all the pretty colors and tasty flavor combos!

  • 5 Berry
  • Mango Blackberry
  • Apple Walnut
  • Goji Blueberry
  • Nuts & Seeds
  • Chocolate Cherry

Chiso is nowhere near as indecisive as i am and chose 5 berry immediately.

there's an oatmeal cookie recipe on the back of the carton that i'm totally going to try!  anyway, if you don't/can't whip out a pot to boil water, then don't.

20150904_101903-01-1
20150904_101903-01-1

microwave a mug of water (enough to cover the top of the dry oats) until it's pretty darn hot (bout 2.5 min),

20150904_102626-01
20150904_102626-01

carefully pour it into the carton, put the top on,

and in 3 minutes you've got a nutritious, power-packed, start to your busy day.

i love that:

  • i can pronounce and recognize every single ingredient
  • gluten-free & non-GMO
  • small & portable w/ a lid
  • it's naturally sweetened from the antioxidant rich fruit
  • filling & hearty
  • incredible flavor combos
  • my kids ate it ALL!

aaaand i ate my brekky right along side them. so exciting. lol. if you haven't seen my IG posts, my wedding anniversary is coming up and my hubby hasn't told me exactly what we're doing, but that i should pack a bikini!!!!!  so, i wanted to tighten up a lil' bit these last few weeks and get serious with my nutrition.  sure i eat oat bran and egg whites every morning anyway, but i miss being able to snack in moderation (quest bars, arctic zero, wheat thins, goldfish crackers, fig bars, dark chocolate covered raisins, kettle corn) whenever i please!  maintenance mode (concerning my calorie intake / body fat percentage) is fun and where i belong right now, but i just want to bring my best package to the beach, hahaha.  master trainer and 1/3 of the 6 Pack USA team, Brian Egwuatu quickly drew up a customized meal and workout plan for me that has got me wondering if i ever want to compete in a bikini competition again LOL!  it's been 3 years or so of not having this many restrictions, but hey, the more change you desire, the more restrictions you must make.  it is what it is.  plus i'm working on an outrageous 2 week timeline so just know ya girl is over here STRUGGLIN' for the cause!  once we are done frolicking and celebrating i will happily return to maintenance beast mode.

i HATE leg extensions!!!!!!!! that is all.

anyway, if you'd like your very own Modern Oats variety pack, you can order them right here via my FFL Store!

cut off t-shirts...the secret to muscle gains ;) . that's it.  a participant actually cut this shirt for me right before our Zumba half-time performance this past monday during the Rockets game (yeah haven't gotten that post up yet, whoops) and now i want to do all my lifting shirts this way! will have to YouTube a tutorial for sure.  after Barbell Strength class this morning i did back & biceps on my own before starting my day.

20150224_064613_1-1

whenever i see these baby 1 lb weights on the rack i think about how cute they would be for my future mini me. baby fever strikes again! i've never seen anyone actually use them (other than for a door stop) but aren't they adorable??

20150224_125240_1

on my last grocery trip, i got a few of these StarKist Tuna Creations from Walmart.  i devoured the Sweet & Spicy and Herb & Garlic flavors a few days ago and finished the Hickory Smoked tuna today. all three were tasty!  love me some portable protein!  someone on IG said they have a Ranch flavor and i sure wish i had seen it at my Wally World.  i'm on the hunt for it.

20150224_125040_1-1

they are already packed with a ton of flavor, but to the Sweet & Spicy one i added:

  • raisins
  • boiled egg whites
  • green onion
  • Grey Poupon Mild & Creamy Dijon Mustard (calorie-free)
  • cracked black pepper
  • red pepper flakes
  • sweet smoked paprika

and topped a few raw red bell pepper slices for lunch one day.  again, it didn't even need all the hoopla!  i usually add all those ingredients to regular, unflavored tuna though.  try it and lemme know what cha think.

what did i end up doing with this overripe bunch of bananas?  i found a WINNER:

Vegan Coconut Banana Bread Oatmeal Chocolate Chunk Bars

PhotoGrid_1424985379410

say that 3 times fast!  soooooo, vegan desserts have completely won me over.  i have committed myself to creating way more of them.  i've had a handful of moms contact me about making tasty food for their kiddos with specialty diets, and dairy-free is usually at the top of their list (for the parent's diet too).  i understand completely cause bloating = :( . i found Minimalist Baker surfing the net one day and saw about a quadrillion recipes of theirs i wanted to try.  most vegan dessert recipes i've come across contain a bajillion ingredients, like forreal.  i get discouraged myself just scrolling through them.  that's another reason i like Minimalist Baker though, hence the name! simple, tasty, and they use as few ingredients possible.  busy moms appreciate that too!  i know i do.  anywaaaaaay, this recipe is oil-free, egg-free, wheat-free, diary-free and still tastes freaking AMAZING.  that's always my first concern when all the 'good' stuff is missing from a recipe, ha. i found and adapted this recipe from another healthy site i came across during cardio recently, Ambitious Kitchen.  these do NOT disappoint your taste buds or your waistline.  now that's my kinda dessert!!  all things in moderation though, yall.

PhotoGrid_1424985235938

no apologies...my nails are the last thing on my to-do list these days. actually they never even make the list. PhotoGrid_1424985003491

moist, delectable, and HEALTHY!  PhotoGrid_1424984921627

go ahead, get PIN-happy! i'll wait :)

pan fried curry zucchini fritters + yeeeee-haw! Rodeo Run 5k

the response from my last post was incredibly overwhelming.  i'm already hormonal yall, jeez!!!! some of you even shared your heartfelt, REAL life preggo journeys with me.  it just reaffirms the fact that all women have a story to tell.  we all jump through, over, and under hoops all day, every day.  that's life.  God is true to His word though!  i'm honored and elated that women were able to connect with me on a more personal level and get encouragement and inspiration to keep pressing through their own struggles.  we all need it.  anytime you ever feel the need to share with me or ask any particular question about my journey, do so without hesitation!  le@fitfoodiele.com.  again, thank you all for reading and commenting openly and privately.  to God be the glory.

1393811170

the Rodeo Run went down yesterday morning!  i picked up my race packet Friday and brought along a list of 3-year-old b-day party locations to check in the area.  yep, Chiso's getting a birthday party this year.  we did a small gathering at the house last year for his 2nd and remember i went batty for his 1st  so now it's time to venture out.  i think. suggestions? email me.

1393810819

i broke my 'no oats pre-race' rule and had big bowl of them topped with bananas, blueberries, and some coconut crystals before we hit the road.

1393810938

i walked/ran with a friend of mine, Krystal, and Chiso got to play and hangout with her son, Max.  Krystal is in FAB shape, right!? that's her 9 month old daughter in her arms.  she is such a big fitsporation to me!

1393810883

grateful to still be moving and shaking at 25 weeks now. my next race is the Bayou City Classic, and the link is over there in the events side bar!  strollers are welcome, so moms, let's do this!  email me if you'll be there; i'd love to meet up at the post-race party.  and if you see me running, SAY HAY!!!!!

   1393819037

i have the patience of Chiso sometimes when i'm cooking and i often end up with a scramble instead of a perfect patty or cake.  i am sooooo dang proud of how these turned out!  best ones yet and so much savory deliciousness in every bite. please enjoy them as much as we have.  i got some garlic & herb goat cheese from HEB after the race that i have been spreading on them and, well,
