Bey and J are performing in Houston tonight and guess who's going!??!?! all of Houston!!!  except us. we're at home eating zucchini pizzas and staring at each other.

IMG_20140718_174525these healthy, light snacks are bursting with Italian, cheesy goodness and make THE perfect party appetizers by the way! you just need to serve them immediately while they are hot and bubbling. else, the cheese hardens up. but i can eat cheese at any temperature. especially burnt cheese. yummy.

Zucchini Pepperoni Pizza Poppers

the stuff:

  • 2 raw zucchini, coined 1/2 in thick
  • 1/3 cup homemade marinara
  • 1/4 cup turkey pepperoni rounds, chopped
  • no stick cooking spray
  • Italian seasoning
  • 1/2 cup shredded cheese of your choice (vegan, dairy-free, cheddar, monterey  jack, pepperjack, mozzarella, etc.)

do this:

  1. wrap a large flat baking plan with foil and coat with no-stick cooking spray and set your oven broiler to high
  2. heat a large griddle to med-high heat  (i made pancakes for breakfast and the griddle was already out but you can use a very large skillet too) and coat it with no-stick cooking spray
  3. place as many zucchini coins flat on the griddle as possible and cook for 1 minute (you may have to work in batches)
  4. flip the coins over and cook for an additional minute
  5. transfer the cooked coins to the baking sheet lined with foil
  6. dab some marinara sauce on the top of each coin and using the back of a small spoon, spread mixture out

  8.  sprinkle a few shreds of cheese on top of the sauce
  9.  sprinkle some chopped turkey pepperoni on top of the cheese
  10. place entire pan in your oven as close to the broiler flames as you can get and cook for approx. 5 minutes or until the cheese is melty and bubbly
  11. sprinkle with Italian seasoning. done.

s/n: if you have more zucchini to use up, see if you can stretch your ingredients even further as you might have sauce/cheese, etc. left over.

 i upgraded my fry cutter!  this is the Deluxe Fry Cutter from Bed Bath & Beyond and i got it for 13 bucks after using the 5 bucks off coupon that comes in the snail mail flyer.  great, affordable investment.  the only thing i did have to do first is peel the potato, then slice it in half.  the device only opens so wide, so you might have to cut the ends off to make it fit.  other than that, no microwaving needed before cutting!  sign up for their ads directly on their website to get their coupons.

what a big helper! not just in the kitchen with me but with his little brother as well which is a huge answered prayer. many have asked how the transition with the boys has been and i can honestly say smooth.  putting Dego's dirty diapers in the diaper genie for me is exciting to him. yeah, i'm milking that for as long as he lets me.

WHY didn't i think of this sooner... Quest Bars help out big time with my sweet toof.  i really i only get them when i go to my gym, so now that i'm going almost regularly the bars are making appearances again. THIS time though, i'm going to GNC and buying an entire box. can't keep buying them for 3 bucks at a time, pretty stupid and not cost-effective.  20g protein, 17g fiber, 170-180 cals. coconut cashew is one of my fave flavors! .

didn't get to have my early gym rendezvous this morning so i went power walking this evening.

 i strapped down the girls with two sports bras and hit the bricks.  let me tell you how much i appreciate working my back 2 or more times a week when i was preggo! the weight of these boobs right now..... whew.

anybody else used to buy those tiny wheatgrass shots from Jamba juice?  i did it more than a handful of times.  seeing this wheatgrass powder at Sprouts Farmers Market reminded me of my frivolous spending days.

i cracked the bag open for the first time yesterday and made some  maple wheatgrass pancakes with it!  turned out good enough to share. so i will. image (8)

maple wheatgrass pancakes:

the stuff: ?

  • 1/2 cup oat bran ?
  • 2-3 heaping tbsp wheat grass powder ?
  • 1 tsp maple extract ?
  • 1 tsp vanilla ?
  • 2 egg whites ?
  • 1/2 tsp baking powder ?
  • 4 tbsp unsweetened vanilla almond milk (or more if batter is too thick)
  • 1-2 packets stevia ?
  • 2 tbsp unsweetened apple sauce

do this:

combine real good and cook up like cakes in your no-stick cooking spray coated, medium heated skillet!  3-4 minutes each side.  top however you like - i chose pecan pieces and Walden Farms zero calorie pancake syrup.

i took a FULL rest day yesterday and did some grocery shopping .  Walmart was planned.  Whole Foods was not.

after sacking 43 lbs of sweet potatoes in Wally World, my eyes caught ahold of a big end cap of these One Step French Fry Cutters.  *jaw drops*  and then i saw the price directly below them: $9.88.  *jaw drops lower*.  i threw the cutter as well as all the skepticism 'as seen on tv' products come with in my buggy and kept truckin'.

i'd say it worked pretty well, wouldn't you!? great investment.  i like to chop my veggies by hand, but you can use this thing to chop up a bunch of other stuff too (garlic, shallots, etc).  here's an IMPORTANT TIP though: nuke your potatoes for 1.5 minutes or so (really depending on size) AND cut them in half so it will fit in the gadget (think hamburger style, not hot dog).  and be super careful not to  over cook them! it will create a huge mess.  don't ask me how i know. ugh.

so about Whole Foods... it never fails. i always come out with extra stuff and a biggER bill. i went to get some Bob's Red Mill Whole Wheat Pastry Flour which i could not even find (nor could the store associate) so i got some from the bulk bins. and on the way out i found these two gems:

vegan, gluten-free, organic Sprinklez by Let's Do Organic (cause they DO exist apparently), and vegan (dairy-free, gluten-free, egg-free) Chocolate Chip cookie dough by Eat Pastry.  why did i even bring this up in my house :shock:

 i entered a crazy fluffernutter (marshmallow fluff) challenge on IG last night at the last-minute using what i had and made a big fluffernutter pazookie pie!

blogging from de plane

that post title is false advertisement.  i was so excited to blog from our plane headed to Jamaica to celebrate our 5th anni that i started the post early, from home!  however........ after all the hustle and bustle of the previous night (we had a FANTASTIC time and did well at our first bodybuilding show!!!!! details in my next post) that we naturally *sigh* overslept and missed our WI-FI enabled first flight. UGH. the second flight, which only left 1 hr later, was not wi-fi enabled because well, that's just how things go.  SO, Sonny and i actually spoke to one another (cause people still do that :shock: ) about the weekend's events, the highs and lows of training under one roof, our bodies then and now, how we felt on stage, how each other looked on stage, future shows, etc... yeah we had lots of time to catch up as life has finally slowed down a little.

i can't shake this 'i need to be prepared for anything' feeling, which is a good thing though. i knew i wouldn't go completely HAM on sweets so soon after the show, so i packed some healthy stuff for our trip a few days beforehand to make this a gradual thing:

 strawberry flavored magic pop, some shelled pistachios, light tuna packed in water, apples, chocolate PB2, canned salmon, and a stack of Food Network magazines i never found time to sit down and crack open.

not gonna lie- even though we woke up super late and rushed out to miss our flight, i still had my oats and bananas lol!   i really WANTED them though and didn't have time to get creative and make something else anyway.  we had a quick layover in Charlotte, NC, and it was there where i was reunited with the dairy food group again after over 3 months. i had an unused Starbucks gift card from Christmas, so i whipped it out and ordered a fruit cup and one of my fav drinks- a skinny vanilla latte.   

so, even on vaca, and i said i was gonna try and stick to 5-6 balanced meals a day, but also indulge and live a little! with everything being all-inclusive (unlimited food and drinks EVERYWHERE) this is hard.  not doing TOO bad so far though- there are different menus everyday, so i'm grateful for the variety.  for breakfast, there's a live omelette bar- was so excited to see that!! can you guess what i've been ordering? haha

 they only have *GASP* instant oatmeal which is disgusting and tastes and looks like wall paper paste. maybe even worse. i see why some people might be turned off by oatmeal if they ever have this stuff when eating oatmeal for the first time, my goodness. i mean it was BAD.  there aren't enough toppings in the world to mask a bowl of that stuff :shock:

my lunches and dinners have been looking a little like this: salad,

fruit / veggie plate - raw celery, tomatoes, artichokes, watermelon, cantaloupe.

and yes that's a slice of cheese pizza lol- i said on IG that i've had a slice with every meal so far except breakfast and that is still in effect!

random lunch plate - curried tilapia, roasted yellow potatoes, sautéed green beans/onions, jerk chicken.

random dinner - grilled jerk chicken, beet salad, raw tomatoes, zucchini, and chicken/tomato pizza;)

have we been indulging? DARN RIGHT. they don't just put out one dessert as you can see.  i made us a sample plate and well, we got our sample on.

rum cake, chocolate chip cookies, strawberry cheesecake, vanilla mousse cake, and chocolate cake.

there is a poolside grille that is open til 1 am (they shouldn't have told us that) and we took advantage right away.  fried fish and french fries - we split this though!

the buffet people see us coming a mile away LOL. we are always right on time for every meal!

 having a really good time so far and i can't wait to post about our show.

 for now, back to Jamaica!

10 days to destiny

my last post was deleted completely and i almost cracked.  it's not the first time that has happened, but when it does, my 'make up' post usually turns out better the second time.  and i remember to add a whole bunch of stuff i left out the first time. so, it's all good.

so, HI :)

this post was supposed to go out on Labor Day, whoops.  speaking of LD, was there a party at your gym late-morning/early afternoon too!?  i think everybody slept in, then got up and went to the gym at the same time.  there were people EVERYWHERE on every machine.  that's a good thing though as there are no holidays for your health.

oh and also, i have managed to go from an iPhone, to a brand spanking new Samsung galaxy s3, to NO phone in a matter of days.  gaaaaaaaaaaaah, having no phone is THE absolute worst thing ever these days.  especially when it's your fault :roll: replacement phone is en route. i miss Instagram so much, lol!  IG on the PC is wack!

*update*

10 days, not weeks, left until the show.  i have always been a cardio horse, so these last few days of it will be a piece of cake.

 i actually gained some weight this past week (due to the carb loading, water, and gaining more muscle), but i still managed to drop a tad more body fat, whoop whoop.  last progress pic(s) until the show- no spoilers!

my meal plan is different all the way up until show day, so my trainer says to expect more changes and i will.

my abs seem to have disappeared for the moment, but it's temporary bloating.  you know i asked!!

got my show suit, got my theme wear and now all i need to do is PRACTICE.  some more.  oh and get that other stuff done too of course: waxing, makeup, hair, and tanning.  my posing coach, Christine, sent out an email that included a checklist of everything i need to have done or do. all i can say is WHEW!  i felt this same feeling before my wedding, before Sonny's 30th birthday party,  before Chiso's 1st birthday party...  yeah, pretty much before any big event.  a feeling of suffocation, anxiety, and my mind racing a mile a minute... just ready to just get this the heck over with.  my life will then settle down a bit...until the next thing i get myself into.

now for some food porn!!!!

this was Chiso's breakfast today- his current favorite.  banana oat pancakes, banana chunks, and eggs.

i packed a quick snack for him before i headed out too: roasted sweet potatoes, some ripe avocado, and strawberries.

while i was making breakfast, i got going on my lunches-  i munched on steak and potatoes for my low carb menu today.  i roasted my sweet potatoes last night (450 deg oven for about 45 min), so they were already soft and just needed to be reheated later.

i put my grill pan over super high heat and grilled my steaks which had been marinating in liquid smoke, garlic powder, onion powder, and montreal steak seasoning.

i packed up meals 2 and 3 before heading out earlier.

however when i got home this evening, i got fancy!  this totally feels like a cheat meal, forreal.  i made garlic sweet potato fries instead of my usual roasted.  i told you sweet potatoes are SO versatile!

i cut them up, then i got crazy and used all this on them lol.  no added calories but plenty of flavor.  (the smokehouse maple seasoning does have sodium and sugar in it but i went super-duper light) i read about the butter flavoring and it's pretty awesome and smells WONDERFUL.

end result:

POW!!!

grilled sirloin steak topped with avocado, garlic sweet potato fries, and fresh sautéed spinach.  i'll be Instagramming this as soon as i get my phone back lol.

 it tasted as amazing as it looked!

*season the fries and pop them in a 400 deg oven for about 20 min.  spread them out so they cook evenly*

and i get to have it one more time for meal 6!! happy rest of your hump evening!!
