exercise of the day: heel clicks!

HIIT (high intensity interval training) includes anaerobic exercise which is defined as using your muscles at a high intensity for a short period of time. it is awesome for building strength and mass while still benefitting the heart & lungs. my fave benefit-  it builds your endurance and ability to fight off fatigue so you can run, bike, or swim, longer and longer each time.

i had my class do these this morning! super sweaty fun, fun.

1. perform a plie squat (knees and toes facing outward) and ensure your knees do NOT extend past your toes at the lowest point in your squat. ever.

2. spring up from the ground using both your upper and lower body.

3. at the height of the jump, click your heels together then quickly return and repeat consecutively from the start.

-------->30-45 sec straight 3-4 reps<-------- no breaks!  works: legs, butt, and shoulders.

afterwards, i started my day off with some #pancakeporn - tiramisu fudge pancakes were in the building!  i'm giving you three recipes at once, two of which you prolly saw via Instagram by now.  just adding them to the fit recipes section, that's all ;)

ah, yaaaas, nothin' like a post-workout stack of cakes. these were inspired by one of my fave sites, Hungry-Girl.  i made a few subs though which made those nutritional stats even awesomer.

tiramisu fudge pancakes

the stuff:

pancake batter - 209 cals, 5g fat, 34g carbs, 8g fiber, 2g sugar, 22g protein

  • 1/2 cup oat bran (or ground oats)
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tsp vanilla extract
  • 1 tsp coffee extract
  • 2 tsp instant coffee granules
  • 1/2 cup egg whites
  • 2 packets stevia
  • 1/2 tsp baking powder

creme filling - 24 cals, 2g carb, 4g protein

  • 3 tbsp 0% greek yogurt
  • 2 tsp sugar-free jello chocolate pudding mix

chocolate sauce <----recipe 45 cals, 1 g fat, 10g carbs.  OR you can sub stevia for the coconut crystals (15 cals, 3g fat, 2g fiber, 1g protein).

do this:

  • combine all ingredients for the pancake batter in your blender or food processor and blend until smooth (20-30 seconds).
  • cook them up like cakes (3-4 minutes each side) in your medium heated, no-stick cooking spray coated pan.
  • mix creme filling ingredients together (you can totally use cool whip.... i was trying to keep this recipe as clean as possible but dang it cool whip is just amazing and actually tastes better than the yogurt.) #sorrynotsorry.
  • assemble your cakes and stack them one by one, adding a scoop of creme filling in between each cake. top the stack with leftover filling and oooooooh, go ahead a throw a dollop of cool whip on top!!!!
  • drizzle your chocolate sauce over the cakes (you can refrigerate it to thicken), dust with unsweetened cocoa powder, and if you need more chocolately goodness (everybody does) add 1 tbsp of mini dark chocolate chips. YES.

stats below using: oatbran, stevia subs, greek yogurt filling. remember to adjust them accordingly to your recipe though. and TAG ME- this goes for Insta AND Facebook. k?

*you can get the coffee extract and the instant coffee granules while you're at it (any kind will do, Folgers, Starbucks, whatever) at Walmart.*

cinnamon roll pan-crepes

  •  1/2 cup ground oats
  •  4 egg whites
  •  1/2 cup unsweetened vanilla almond milk (or water if you're competing for a show or doing a challenge)
  •  1 tsp cinnamon
  •  half a large banana
  •  1 packet stevia (optional)

sweet greek yogurt sauce:

  •  2 tbsp 0% greek yogurt
  •  1/2 tbsp cinnamon
  •  2 packets stevia
  •  4 tbsp unsweetened vanilla almond milk

do this:

mix until desired consistency and drizzle over your cakes however you please.  long as it's pretty.  a couple sprinkles of Trader Joes cinnamon sugar grinder and/or Walden Farms pancake syrup and you are good to GO.

stats: 297 cals, 5g fat, 45g carbs, 7g fiber, 9g sugar, 21g protein

pumpkin spice pancakes

do this:

  • 1/2 cup oat bran (or ground rolled oats)
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp cloves
  • 1 tsp vanilla
  • 2 packets stevia
  • 1/2 tsp baking powder
  • 3 tbsp canned pumpkin
  • 2 egg whites

do this:

  • mix all ingredients together in your food processor or blender
  • cook up in your medium heated, no-stick cooking spray coated skillet like cakes for 2-3 min on each side.
  • i actually topped mine with a scoop of granola and some Walden Farms pancake syrup, but you already know the options are ENDLESS.

stats (using oat bran): 206 cals, 5g fat, 44g carbs, 11g fiber, 4g sugar, 17g protein.

The Color Run 5k - Houston

what.a.BLAST this morning!  this was my first time participating in the The Color Run 5k and imo,  everything was set up perfectly.  because i have a goal of hosting my own 5k one day, i took special note of well, everything.  instead of just showing up to run, i tried my best to pay attention to all the minor details that go into making a 5k (or any distance really) so great, fun, and memorable.  and BOY am i overwhelmed!!! but hey:

packet pickup was at Rei and i had never even been inside the store until then.  there was soooo much Color Run paraphernalia to choose from it's not even funny!  shorts, fanny packs, drawstring back packs, tanks, frisbees, bandanas, socks,

pre-race breakfast was an egg-white omelette (with some shredded and melted parmesan cheese that was thrown on top as it cooked), fresh spinach, tomato, and honey mustard on Nature's Own double fiber wheat bread.  no oatmeal this time as it can come back to haunt ya real quick if you know what i mean, especially on longer runs.  no pun intended. L O L.   however 5k's are over rather quickly.

i had NO idea how popular this run was!!!  our team was set for takeoff at 9am, but we didn't make it all the way to the front as it was just too crowded.  to avoid so many people on the course at once, they created several 'waves' and our start time was unexpectedly pushed back more than a little bit.  this was terrible because somebody had to drive back across town to teach class in less than 2 hours. yep....me. when i signed up for the race i was so excited about participating i forgot about my class!!!! pushing it, yes, but i knew both could be done.  i can't and won't let my members down. or waste 50 bucks :lol:

i heard somebody was not feelin' the weather change this morning. it dropped to around 50 degrees outta no where.

but we finished strong. it was bob and weave, stop and go the entire way. this was the first untimed race i've ever participated in and it was a true fun run with an emphasis on fun! people were clearly not concerned with breaking any PR's lol.   it's a huge, family and friends type event for sure, and i DEFINITELY recommend this race for anybody's very first 5k.

this peanut butter and strawberry flavor was uhhhmazing. tasted like a sticky, chewy, pb and jelly bar sammich.  these are the only samples i could get my hands on before having to head out.

going and coming, literally. i missed out on tons of pictures and good ol' fashioned color fun and could not stay to meet up with and party with the other runners at all:(  you live and you learn. this was our first Fit Foodies event and we have only just begun to scratch the surface.  so seriously,  NO WORRIES if you weren't able to make it this morning, there are too many races coming up to dwell on one!  just know that plenty of advanced noticed will be provided next time, you have my word.

alright...had this dressing tonight and it's  definitely gonna be added to the FFL approved list!  Walden Farms Raspberry Vinaigrette.  it's great as a salad dressing, but i'm positive it would work as a marinade for fish or chicken too.  try it! i like.

HEB meal deals + banana french toast

it's cooooooold.  Houston finally got with it and the temps have dropped.  enjoy it while it lasts.  this morning though... i did NOT wanna get up.  you hear me?   4:15am came way too quick and my bed was way too comfy.  i admire my members for just showing up to class like they always do.  THAT is true commitment and dedication if i ever saw it. cause ummmm, if i didn't have to be there today.... yeah :shock:  watching them file into the studio one by one, collect their equipment, and wait in anticipation as the clock winded down to begin class gave me the energy and inspiration i needed to give them nothing short of my absolute best!!  and that cup of coffee /green tea combo didn't hurt either.   let nothing stop you from remaining consistent and making progress. nothing. especially something as petty as the weather!

and headed home to take more pics and make breakfast!  saturday i saw all this french toast on IG and it inspired me to make some of my own.  i had some again this morning with my egg white omelette and they hit the spot.  carbolicious. 20121208_101553

i used sesame ezekiel sprouted grain bread and made a sliced banana sandwich first, 20121208_101514

then, i dipped the entire thing in a mixture of:

stuffed banana french toast

the stuff:

  • 1 cup unsweetened vanilla almond milk
  • 1 tsp pure vanilla
  • 3-5 drops of vanilla creme stevia
  • 1 tbsp coconut crystals
  • 2 tsp cinnamon
  • 2 egg whites

do this:

  1. combine all ingredients into a bowl big enough for your sandwich to fit in.
  2. mix them well, then dip your sandwich in on one side for 2 seconds, then flip it to the other side for 2 seconds.
  3. immediately transfer it to a medium heated no stick pan and 'fry' it until brown on one side.
  4. flip it and brown the other side!  plate it up however you'd like and top it with more cinnamon, walden farms pancake syrup, and fresh banana slices.  i even shot it with some 'i can't believe it's not butter' spray a few times.

@  HEB this past weekend, i took advantage of one of their popular meal deal specials.  i got the two-step gumbo and the BBQ shrimp mix for free.  yep, i had some help.

 it's not considered clean, but it's all natural, decent nutritional stats, and quite good!

stats (per 1/2 cup): 60 cals, 1.5g fat, 470 mg sodium, 9g carbs, 2g fiber, 3g sugar, 2g protein

to the gumbo mix, i added 1 cup of water, another cup of low sodium chicken broth, a bag of frozen okra, cut up two roma tomatoes, some fresh cilantro,

and even though it didn't really need it, extra seasonings!  just a few dashes of my sweet smokey chipotle paprika, black pepper, sriracha, and 2 squirts of liquid aminos.  it all came to a rolling boil, then i let it simmer for about 20 min on low so it could thicken up.

i THOUGHT i had some shrimp leftover from last week's kale tacos, but nope...all gone.   wish i had realized that before i went to the store!!  i ended up using some of the bbq tilapia that you're gonna read about in a sec.   so if you have some, you can totally add shellfish, crab, sausage, etc. because gumbo just ain't gumbo without it ;)

i added a scoop of brown rice on top and Sonny mixed it all together before he gobbled it up.

when you buy the gumbo mix, you get this free.  i got to sample this stuff on some steel head trout while in the store which is what sold me on it!  i believe the cooking demo lady used olive oil to thin it out though:(  but it was soooo good. when i got home, i took 2 tablespoons of the shrimp mix and added 1 cup of unsweetened vanilla almond milk to make a creamy marinade for my tilapia.

stats: (per tbsp) 25 cals, 1g fat, 1g sat fat, 340 mg sodium, 3 carbs, 2 sugars

oh yeah, while i was @ the store, i came across these guys.  can you read that sign?  it says purple sweet potatoes are higher in nutritional value than the traditional sweet potato.  who knew? i didn't.  a friend of mine advised that i check out an Asian market  for these babies though cause that 2.98 a lb is a little too steep for me.  can't wait to try them!

now for my last unexpected purchase!  i've been drinking almond milk for like the past 3 years now and i have no plans to go back to dairy milk anytime soon, or ever.  but when i tell you i almost slurped down this whole box, you better believe it.

 Chiso hasn't been a fan of drinking milk solo, so i've just been using it to make his oatmeal instead of water so he can still get his vitamin D and calcium.  after i let him sample a little of this Horizon Organic Vanilla milk @ the store, to my surprise, he asked for more immediately!  actually i'm not surprised cause it's a little high in sugar (22g) and it's vanilla flavored. lol.  however, it's all natural, and still loaded with nutrients, so it went in the basket.

dark chocolate pumpkin spice fudge brownies

crazy good 5:30 am workout this fine tuesday morning!  got through 1 hour of Total Conditioning,  a Lifetime Athletic signature formatted class.  almost 700 cals burned!  i set aside some time every monday to sit down and write out exercises for my class.  i have always sucked at making up stuff on the spot- that never goes great for me.  like i could never be given a mic and asked to 'say a few words' at an event... omg.  i'd totally pee on myself.  however if  i'm to speak about health, fitness, or FOOD, i'd be straight!!

i'm no longer unbeweavable.  i know sew-ins are supposed to last way longer than one month lol, but that's all i could take.  i definitely sweat out my perm this morning and i'll be smelling it for the next few days.   aaaaand so will anybody on the elliptical to the left and right of me :lol:

after  my class, i did a quick upper body circuit cause i didn't get to finish my workout from last night. i did:

bench press 4 x 10

machine curls 4 x 12

machine tricep extensions 4 x 12

machine pull ups 4 x 10

pushups 4 x 10

cable flyes 3  x 12

with moderate - heavy weight.   didn't do abs cause i do them at the end of my class.

breakfast was my banana-cinnamon oats and spinach egg white omelette as usual. dinner last night though.....

i was imagining making and eating this while on the elliptical, not even kidding.  could not get home fast enough.

grilled chicken BBQ pizza.

i used mc. cormick BBQ seasoned grilled chicken, Trader Joe's organic pizza sauce, roma tomatoes, shredded rice cheese, and fresh cilantro on an oatmeal/egg white pizza crust.  i made two out of one serving and killed them both immediately.

are you stocked up on canned pumpkin through the winter? lol.  i have way too many cans of it in my pantry right now.  i bought so many at once though cause there was a shortage last year.  i use canned pumpkin all year round though, and pumpkin pie is my fave next to key lime.   pure pumpkin is low-fat, low sugar, low carb, and has plenty of fiber.  great for sweet and savory dishes, just like sweet potatoes.

i cannot wait until Chiso can participate more with me in the kitchen!  i have so many fun cooking projects planned.  for now, he's my studio audience and listens to all my cooking demos.  yeah right, he only sticks around if i give him snacks.

Sonny requested brownies, so i made some with canned pumpkin. who the heck knows who created this recipe first, but i got it from Hungry Girl a couple years back.  it's just 1 can pure pumpkin mixed with 1 box of  brownie mix.  no oil, eggs, or butter.  i added a few thangs though.

dark chocolate pumpkin spice fudge brownies

the stuff:

  • 1 box fudge brownies (your fave brand)
  • 1 can Libby's pure pumpkin
  • 1/2 tsp pumpkin spice
  • 1 tsp vanilla
  • 1/4 cup dark chocolate chips (optional)

i cut 15 servings outta my loaves.

do this:

set oven to 350 and mix everything together in a big bowl until smooth.  no lumps or dry spots.  cooking times vary..but since the batter is thicker than normal, take it out after baking it for the required time according to the kind of pan you use and do the toothpick test.

 

 hey, the stats are still waaaay lower than the normal box recipe.

made two loaves instead of using a rectangle or square pan- one with chocolate chips, and one without. which was stupid cause all our visitors ate the one with chips.

and that's why!  i microwaved a piece for a few seconds until the chocolate melted a little, then topped it with some vegan whipped topping (found at HEB in the vegan/produce department).

a is for age: 30th b-day is in t - 5 days!

b is for breakfast today: the usual- i start craving my oatmeal and egg whites as soon as i wake up, seriously.

c is for currently craving: all things SUGAR!!!! which proves that sugar addiction is real.  i'm conducting a little experiment. i have dropped (not quite 100% but a GREAT deal) of all processed foods from my diet and i'm only getting sugar from natural sources (100% real fruit). 1 week down and i have tightened up all over my body; lost inches all over and especially in my waist, and i'm definitely more defined. my muscles are popping out and waving hello!

d is for dinner tonight: stuffed turkey bell peppers w/ brown rice.

e is for fav type of exercise: cardio and weights COMBINED. i teach a class called Total Conditioning- it's a Lifetime Fitness signature format.  can you say calorie burning fest?!?! the first time i ever took the class i was extremely intimidated; didn't think i'd ever get the hang of teaching it.  now i can't get enough of it.

f is for irrational fear: big boats and open spaces. e.g. cruise ships and places like the grand canyon. yeah i don't get it either.

g is for gross food: most of the time i find that it's a texture thing with people.  in this case it's texture and smell for me- chitterlings. no thanks. ever.

h is for height: 5'10. my driver's license proves it.

i is for ice cream: marble slab sweet cream mixed in with chocolate chips.  any other time, it's self-serve fro-yo w/ random toppings.

j is for favorite jam: booooy when this particular song comes on in my gym class i get my second & third wind outta nowhere.  i could be a tired, sweaty mess and almost to the end of class but this song gives me a surge of energy to finish strong.  it's 'Nah Mean' by Mannie Fresh- the edited version played at 140 bmp (super fast) though! pretty sure my members are sick of it by now:)

k is for kids: my unbelievably, awesome, blessing and precious gift from God. my 10 month old. for now.

l is for current location: @ work. blogging. shhhhhhhhhhhh

m is for the most recent way you spent money: i'm TRYING to spend money and find my bday dress!! been to look for it twice now with no luck.  still need shoes too. and a bag.  i'll find something though. i always do!

n is for something you need: God and His word.  every single day. my husband.  i need some form of contact with this man on a daily basis (after we go our separate ways in the morning of course). whether it be by text, skype, facebook, email, it doesn't matter.  with all this technology, a plain ol phone call was the last thing i thought of, smh.

o is for occupation: IT manager, group fitness instructor, fitness model, entrepreneur.

p is for pet peeve: at the moment, drivers who don't turn right on red. ESPECIALLY downtown. who doesn't know this!?

r is for random fact: i eat cool whip like it's ice cream. i add sugar-free chocolate syrup and make a 'mousse'.  i've thrown some chocolate PB2 up in there before as well.  i can't be the only one doing this...

s is for fav healthy snack(s): 2% greek yogurt & toasted pistachios drizzled with honey.  fresh veggies & hummus. peanut butter & celery/apple. freeze dried fruit (especially bananas), banana protein smoothie, cottage cheese w/ fruit...

t is for favorite indulgent treat: key lime pie & grain-sweetened chocolate covered raisins from whole foods. chocolate chip paradise from chilis.  my brother is the only person i know that can eat one of these a day and not gain a pound.

u is for something that makes you unique: i prefer grocery shopping over the shopping mall, any day.  but you knew that already, right!

v is for fav vegetable: sweet potatoes. they are SO versatile. sweet, savory, fried, baked...

w is for today's workout: 1 hour of total conditioning

x is for the # x rays you've had: besides being born and giving birth, i pretty much stay outta the hospital.
